Resumo: A desnutrição na infância, consistindo no déficit estatural ainda é um problema de saúde pública principalmente quando associado à anemia representam conjuntamente os problemas nutricionais mais prevalentes em muitas partes do mundo. Uma alternativa para recuperar esses agravos nutricionais seria uma alimentação equilibrada com alimentos regionais de baixo custo e de elevada densidade nutricional. Em Alagoas, o sururu e o leite de coco constituem uma preparação amplamente conhecida e apreciada estando ligada a própria cultura do estado. Com base no exposto é que se propôs avaliar a eficácia do sururu (Mytella falcata) e da preparação sururu com leite de coco na recuperação de crianças desnutridas, moradoras de favelas – Maceió-AL. Para tanto, foram avaliadas 64 crianças desnutridas crônicas escore Z < -2 para índice altura para idade (A-I) com idade variando entre 12 e 71 meses atendidas no Centro Recuperação e Educação Nutricional – CREN-AL. Elas foram pareadas por idade e grau de desnutrição formando 3 grupos de estudo. Todos os participantes receberam dieta balanceada para a recuperação nutricional diferindo apenas na oferta proteica. Foi ofertada ao grupo 1 (carne) preparação de carne, ao grupo 2 (sururu - SS) preparação de sururu e ao grupo 3 (sururu com leite de coco - SCLC) uma preparação de sururu com leite de coco. No almoço ou jantar era ofertado para os referidos grupos o alimento em estudo na porção de 30g de carne para o grupo 1 (carne) e 60g de sururu para o grupo 2 (SS) e 60g de sururu com leite de coco para o grupo 3 (SCLC). A diferença na oferta dos alimentos se deu em virtude da quantidade de proteína da carne, isto é 30g de carne tem proteína similar a 60g de sururu. Os resultados indicaram diminuição da prevalência de desnutrição em todos os grupos estudados. A avaliação antropométrica ao final do estudo revelou que as crianças obtiveram um incremento médio em escore Z de 0,72 para o grupo da carne, 0,62 no grupo que recebeu sururu e 0,60 no grupo que recebeu sururu com leite de coco (p<0,05). Também constatou-se redução da prevalência da anemia nos três grupos com percentual de redução de 22,8% (p=0,002), 27,8% (p=0,007) e 42,4% (p˂0,001) nos grupos da carne, SS e SCLC respectivamente. Conclui-se, portanto, que a preparação sururu com e sem leite de coco pode ser um substituto eficaz da carne bovina no combate a desnutrição infantil e da anemia, podendo ser incluída no cardápio e na merenda de instituições infantis (creches, escolas) e em programas que visem à recuperação nutricional de crianças.
Abstract: Childhood malnutrition, consisting of stunting is still a public health problem especially when associated with anemia together represent the most prevalent nutritional problems in many parts of the world. An alternative to recover these nutritional problems would be a balanced diet with food from regional low-cost and high nutritional density. In Alagoas, the mussels and coconut milk preparation are widely known and appreciated being linked to the culture of the state. Based on the above it is proposed to evaluate the effectiveness of mussels (Mytella falcata) and preparing mussels with coconut milk in the recovery of malnourished children living in slums - Maceió-AL. Thus, we evaluated 64 children chronically malnourished Z score <-2 for height for age index (A-I) aged between 12 and 71 months seen at the Recovery Center and Nutrition Education - CREN-AL. They were matched for age and degree of malnutrition forming three groups. All participants received a balanced diet for the nutritional differing only in protein supply. It was offered to group 1 (beef) meat preparation, group 2 (mussels - SS) preparation of mussels and group 3 (mussels with coconut milk - SCLC) is a preparation of mussels with coconut milk. The results indicated a decrease in the prevalence of malnutrition in all groups studied. The anthropometric evaluation at the end of the study revealed that children had an average increase in Z score of 0,72 for meat group, the group that received mussels 0,62 and 0,60 in the group treated of mussels with milk of coconut (p<0,05). Also, there was a reduction in the prevalence of anemia in all groups with percentage reduction of 22,8% (p=0,002), 27,8% (p=0,007) and 42,4% (p˂0,001) in groups of meat, SS and SCLC respectively. It follows therefore that the preparation mussels with and without coconut milk can be an effective substitute beef in combating child malnutrition and anemia, may be included on the menu and meals of children's institutions (kindergartens, schools) and programs aimed at recovering malnourished children.
